This was done because, in the era of the Scriptures, there had been a huge scourge from parasites brought by extraterrestrial beings, to corrupt the flesh of animals, and this was most effective in swine. Over time, people began to make the association between eating pork and becoming ill, and this was imparted through divine inspiration, and prophecy as well, to sound an alarm. It was heard and taken to heart by spiritual leaders of the day and led to those injunctions surviving still in the Scriptures. They are out of date, not with respect to the fact one must be careful about safeguarding use of pork in the diet, but the fact that it is no longer a widespread scourge with no way to counter it, making pork anathema to human survival. It is safe to consume except in rare instances where tainted meat can arise, but this is in mostly undeveloped countries, on a very small scale, so that injunction against eating pork can be safely ignored.
