You are seeing nicely, the array of possibilities that can explain such behavior from a companion animal. And indeed, two of them are in play, both karmic vulnerability from prior lifetimes among humans, as well as spirit attachment, and the latter is stirring up the former to cause that increased sensitivity and fearfulness. If you place the cat on your wish list of issues, this will be addressed by the protocol work and you will see an improvement over time.
