The salt mines are often remnants of this early intervention by extraterrestrials during the first human presence, when the Earth was orbiting its companion star and not the Sun of today, and that is why huge salt deposits remain. They were from that earlier era when the landscape was quite different and areas now land were underwater at that time and then subsequently allowed a deposition of quantities of salt in those locations.
